Stuffed Italian Frying Peppers


I came up with this because I needed to use up some Italian frying peppers.  This is now my FAVORITE pepper to stuff.  It has a nice flavor and little heat.  I split two pepper down the middle and scooped out the seeds.  In a separate bowl I shredded about 2oz of low fat pepper jack cheese.  I mixed shredded cabbage with the cheese and stuffed the peppers.  I then took slices of turkey bacon and wrapped the peppers.  I baked the peppers in a greased baking dish at 350 for about 45 minutes.  Probably could have baked at 400.  When I took them out of the oven I sprinkled with my honey nut chicken breading.  Spank me this was an amazing and healthy dinner.

A friennd turned me on to General Tso Tofu. I started finding out the secret ingredients and how to easily make the sauce and I came up with this recipe with quick accessible ingredients I keep in my pantry. So whenever I am craving General Tso Tofu and can't get to Chinatown I can whip this up in 15 minutes.


  • 1/2 cup Smukers Orange Marmalade
  • 1 cup Kraft Catalina Dressing
  • 1 packet Soy Puffs
  • Pinch (to your desired heat level)Red Pepper Flakes
  • 1 bunch Scallions


This is Anita's quick and easy recipe that uses ingredients you probably keep in your pantry.


Step 1
In a baking dish toss the Soy Puffs with oil. Bake in the oven at 400 degrees for about 15 minutess. Exact time will depend on your desired crunch level.
Step 2
In a small sauce pan combine the Orange Marmalade with the Catalina dressing. Add the pinch of red pepper flakes. Cook over medium heat for about 5 minutes. Just until the sauce is warm and mixes easily together.
Step 3
When the Soy Puffs are ready. Plate desired portion and pour the sauce over the puffs. Sprinkle with the chopped scallion and enjoy.
