German Apple Salad

My great Aunt Aline was famous for her German Potato salad.  It was something from my childhood that I crave.  Unfortunately, my Aunt passed away before I could get the recipe.  Luckily I had helped her cater events when I was a kid and I kinda know the method.  So I have tried to recreate the flavors with a variety of ingredients.  The Apple Salad is a healthier version of the salad.  Continue Reading for the recipe.

German Apple Salad

My great Aunt Aline was famous for her german potato salad. My brother and I are always looking for ways to recreate the yummy flavors. This recipe is a healthier version of the potato salad and just as yummy!

Ingredients

  • 5 Tart Apples
  • 4 slices of turkey bacon
  • 2 stalks of celery (green leafy parts best)
  • 1 Red Onion
  • 4 tablespoons Apple Cider Vinegar
  • Celery Salt to taste

Directions

Step 1
Add a tablespoon of Coconut oil to a cast iron pan. Turkey bacon does not render a lot of fat and will stick and burn to the pan without a little oil. Fry the bacon in a cast iron skillet to your desired crispiness. Leave the oil and drippings in the cast iron skillet. Remove the bacon and let it drain on a paper towel.

Step 2
Chop onion and celery and 2 of the apples. Reserve half of the celery an onion mixture to add raw to the salad.

Step 3
Add the chopped celery and onions to the pan that the bacon was frying in. Allow to cook in the pan for a couple minutes over medium heat. Add the apples after a few minutes and allow the apples to cook with the celery and onions for a couple of minutes. Transfer to a bowl and pour the apple cider vinegar over the mixture.

Banana Croquette Ice Cream — New Take on KY comfort food.

Banana whips are all the rage here in the Northeast.  Thanks to Rachel Ray I know that they are basically frozen banana’s blended in a food processor.  So easy!!!! Just slice up banana’s and freeze them.  Place the sliced frozen banana’s in a food processor and process until creamy.  A quick and healthy ice cream treat by themselves.  Well I took this idea to the next level!!! Rice & Spice – Dana Mandi (42nd and Chestnut – West Philly)

Rice & Spice – Dana Mandi around 42nd and Chestnut in West Philly is hands down one of my favorite places to eat Indian food!!!  The Samosa’s are out of this world!  My friend Sharon was visiting from NYC and I couldn’t wait to share this gem with her.

I feel like I am visiting family with each visit.  I had to learn the how to order,  but once you get it you get it.  There is a basket near the water with blank pieces of paper in it.  Write down your order and take it to the kitchen window or give it to someone in the store.  Wallaaa you are over the learning curve.  They have a TV in the dining room where they play Ballywood movies  This adds such a nice touch!   Continue reading
