Eggs with Scallions and Cheese

This recipe is more of an inspirational method. Choose the ingredients that you like the best and have fun exploring.


  • 3 Fresh Eggs
  • 5 Scallions
  • 2 wedges Weight Watchers Parmesan Peppercorn Chees (You can use your favorite cheese.)


Step 1
Heat a skillet with a small amount of oil, butter, butter substitute. I used Coconut Oil.
Step 2
Chop the ends of the scallions and toss in compost or in trash. Finely chop all the scallions. I like a lot of scallion flavor so I had a loose cup.
Step 3
Crack and scramble the eggs. Place in the warmed skillet.
Step 4
Gently move the eggs around in the pan so they begin to cook evenly. Add the scallions.
Step 5
Just before the eggs have reached your desired doneness add the cheese and allow the cheese to melt into the eggs.
Step 6
Smile, Serve and enjoy!
