Farm 51 Eggs – Open Faced Egg Sandwich

One of my favorite breakfast foods is an Egg Mc Muffin from Mickey D’s.  It isn’t the healthiest option so I often look for substitutes that give me the same flavor POW!!!  This sunday morning I used 2 of my  FAVORITE!!  Farm 51 eggs.  Turkey Bacon and diet low calorie bread and fat free swiss cheese and came up with today’s version.  I didn’t feel deprived of anything. Recipe below.

Open Face Egg Sandwich

Ingredients

  • 2 Eggs (Farm 51 or other fresh eggs will be your secret ingredient. )
  • 2 pieces Diet Low Calorie Bread
  • 3 medium slices Ed Hipps Turkey Bacon (Love this ingredient)

Directions

Step 1
In a cast iron skillet fry up your bacon. I added about a tbsp oil to keep the bacon from sticking.
Frying the egg
Step 2
Move the bacon to the side or take it out of the skillet. Crack your eggs into the oil bacon dripping mixture. Cook to you desired doneness
Toasty Bread
Step 3
Toast 2 pieces of diet bread while the eggs are cooking. Butter them when they reach the desired toastiness and place them on a plate.
Step 4
Place the bacon on top of the bread.
Step 5
Remove the fried egg from the skillet and place on top of the bacon/bread.
Step 6
Place one slice of cheese on top of the egg and let the cheese melt.

Step 7
Pour some coffee. Sit down with the Sunday paper and enjoy!!
