I was introducing a Indian friend to the Asian Spice store in West Philly. Her eyes lit up when she saw the variety of Indian pickles. I knew right then that these pickle things must be special. So I asked her about it and she explained that they were pantry staples that you added to dishes to give them authenticity. The ones you favor depend on your taste.
I love Mango’s so I got a bottle of the Mango pickles. I made a dipping sauce with them for Falafel. I think the uses for these are endless and learning about Indian pickles is now a mission of mine. So stay tuned and see what I discover.
