Neal’s Breakfast Tacos with White Turnips

Neal’s Breakfast Taco

This is a fun recipe to play around with. I basically came up with this by thinking about the ingredients I got at Farm 51 last night and used Neal's idea of a breakfast taco and wallla...Neal's breakfast taco was born. We were talking about ideas for using the white turnips. Turnips are amazing when they are fried or baked. So I used them as the breakfast "potato" .

Ingredients

  • 1 bunch White Turnips
  • 2 Eggs
  • 1 Slice of Cheese chopped into shreds
  • 1 cup Mustard Greens
  • 2 heaped tablespoons Fiddle Heads chopped
  • 1/2 cup Green Onion Tops chopped
  • 2 Flour Tortillas charred

Directions

Step 1
Heat cast iron skillet on high and add 1 tsp of oil. Char the tortilla in an oiled cast iron skillet.

Step 2
Remove tortilla and lower the heat for the skillet to medium. Chop white turnips and brown in cast iron skillet. Add chopped fiddle heads after about 10 minutes of cooking.

Step 3
Chop mustard greens , cheese and green onion tops and set aside.
Step 4
Remove turnips and fiddle heads from skillet after they reach the desired browness, Lower the heat of the skillet to low and add 1tsp of oil to the skillet.
Step 5
Scramble the eggs and add them to the skillet. Cook until done.
Step 6
Add the eggs to the tortilla's and build your breakfast taco with the other ingredients.
