Nita’s Moroccan Quesadilla

Nita’s Moroccan Quesadilla

This recipe uses Nita's Beans and Lentils but gives it a new flavor twist.

Ingredients

  • 2 Charred Flour Tortilla
  • 1 cup Nita's Dal Makhami- Lentils and Beans
  • 1 Cheese
  • Coconut Oil
  • Zattar

Note

This recipe uses Nita's Dal Makhami- Lentils and Beans.  The idea behind this type of cooking is that one pot can be used for many many dishes.

The secret ingredients are Coconut Oil and Zattar.

Directions

Step 1
I brushed the tortilla in Coconut oil before charring to prevent them from sticking to the pan.
Coating the tortilla in oil of your choice so it will not stick to the pan.
Step 2
Brush the warm charred tortilla with cococnut oil after they have been charred and sprinkle them with Zattar and salt.
Brush with oil and sprinkle with zattar and salt to taste.
Step 3
Place one of the charred tortilla's on a plate. Pour the hot Nita's Dal Makhami- Lentils and Beans Place a piece of cheese on top of the bean lentil mixture. and place the remaining charred tortilla on top.

Hing Powder – Asafoetida

This is one of those ingredients that will be hard to replace if you are looking to cook authentic Indian cuisine.  I did my research and it said that it is similar in flavor to sauteed leeks and fenugreek.  It is actually a wheat starch and thickens your dish.   I asked for help at the store too and it was good I did because I would have never been able to find this ingredient. Dal Curry mix by Shan

 

This was a tricky one to find.  Luckily the owner of the store helped me out.  International House of Spices has a LARGE selection of Shan products and the owner of the store told me the FDA has made labeling so strict and confusing that it is hard to know what products are what.  Luckily he corrected my choice when I went to check out.  I have a recipe for Nita’s Dal Makhani – Beans and Lentils (recipe below) and I was unfamiliar with a few of the ingredients.  So I did my research via Google and then talked to the owner to see if they had the product.  He guided me in the right direct.
